ST. PATRICK'S DAY CORNED BEEF AND CABBAGE: (Vicki Little)
If you are looking for a yummy and easy recipe for your St. Patty's day dinner, here is a great one for you!

INGREDIENTS

  • 3-4 lbs Corned Beef Brisket with spice packet
  • 5 large carrots, peeled and sliced
  • 10 small red potatoes whole
  • 1 head of cabbage, cored and cut into wedges
  • 1 1/2 Tablespoons cider or malt vinegar (which ever you generally prefer)
  • 1 1/2 Tablespoons sugar
  • 2 cups water

DIRECTIONS:

  1. Mix together water, sugar, vinegar and the spice packet that came with your corned beef and put in the bottom of the crockpot
  2. Add carrots and red potatoes
  3. Place corned beef on top of carrots and potatoes
  4. Cook on low for 8-10 hours or high for 5-6 hours.
  5. During the last two hours of cooking, put the cabbage in the crockpot to finish cooking with the rest of the meal.
Alternatives:
  • If you won’t be home, you can put the cabbage in early but be sure it is on top of the meat to avoid it getting soggy. Or you can boil it for fifteen minutes before serving (use broth from meat for flavor).
  • The vinegar and sugar are simply to help marinate, so if you would prefer not to include those it won’t change the flavor too much.
  • Serve with the broth from the crockpot or a creamy horseradish.

ST. PATRICK'S DAY PANCAKES:(Heather Wirtz, ME of Macaroni Kid EATS)

Rainbow cake and cupcakes have become very popular and with good reason, they are fun!  Kids and adults are amazed at the rainbow/tie-dye pattern that is created by adding a little bit of food coloring to cake batter.  

We decided to try the same experiment with pancakes! Colorful pancakes are very simple to make and you can create just about anything with a little bit of imagination! My boys ate them as quick as I made them, I had to hide a few just for photos!

You will need:

  • Pancake mix - prepared as stated on the box
  • Food coloring - we used Americolor red, yellow, orange, green, blue & purple
  • small bowls & spoons (for each color)
  • Colored sprinkles - optional

Directions:

  1. Prepare batter and divide evenly into small bowls. You should have equal small bowls of batter and colors you would like to use.
  2. Put a few drops of food coloring into each bowl and mix well. You can also add sprinkles for even more color!
  3. Heat skillet and cook pancakes as directed on pancake mix.
  4. Now it is time to create! Simply use a spoon to place different color batter onto skillet (a small squeeze bottle would work well for this too). Use your imagination and experiment with all different designs. We made shamrocks and gold for St. Patrick's Day, along with many different rainbow designs!  
  5. Serve hot with butter and syrup or just enjoy them as is!

ST. PATRICK'S DAY PLAY DOUGH Michelle Melnik; Deerfield/Greenfield

We made green, black, and gold play dough, added a rainbow ribbon, and we are all set for St. Patrick's Day.

Ingredients:

  • 2 Cups of Flour
  • 2 Cups of Water
  • 1 Cup of Salt
  • 2 T of Vegetable Oil
  • 1 T of Cream of Tarter
  • Food Coloring
  • Glitter (optional)

Directions:

Since I was making multiple colors, I cut the above recipe in half and did each color in separate batches. Add all of the above ingredients (except the glitter) and stir continuously over warm heat. I also added the food coloring at this point. You can add the food coloring after, but it's less messy doing it while it's heating up, and since we make play dough all the time, we have a small pot that is specifically for this use. If you add the food coloring outside of the pot, please use gloves, or use sandwich bags on your hands and attach rubber bands on your wrist to keep the sandwich bags in place because it can get messy.

Continue stirring until it begins to form a ball (it will only take 3-4 minutes). I do not leave it on the stove much past this point. It may still feel wet, but after kneading, the dough will be fine. Pour it onto a sheet of parchment paper being careful, as it may be hot. 

For the green play dough, we added a lot of green food coloring. The "gold" was made using only yellow food coloring, but again, a lot of it. We used black food coloring for the black pot.  Black food coloring can usually be found at craft stores and sometimes at Wal-Mart.

 
ST. PATRICK'S DAY TREAT POUCH: Michelle Melnik; Deerfield/Greenfield

These St. Patrick's Day "Pouches" are the perfect size for a small treat or some "gold".

Supplies:

  • Envelopes (we used black envelopes sized 4.75" x 6.5" that we found at Michael's)
  • Glue tape or glue sticks
  • Decorative cardstock 12 x 12 (we used glittery gold and shamrocks)
  • Rainbow ribbon
  • Circle puncher (optional)
  • St. Patrick's Day stickers

Directions:

Start by gluing the envelope closed. Then cut the envelope in half, so you have two pouches that are approximately 3.25" long.

Cut out your shamrock (or other decorative cardstock) into strips approximately 2.5" wide x 8.5" long. These strips can be wrapped and glued around the envelope.

Then decorate your pots of gold with stickers and other embellishments.

Add a St. Patrick's Day treat like goldfish, a small bag of candy, a gift card, small jewels, stickers, etc.
